This is a super simple recipe that tastes great. I always like to use my slow cooker when I know I have a long work day or if I  would rather get dinner going so I don’t have to worry about it later.  Serve with warm tortillas and rice or a great big salad! I really prefer to have fresh greens and veggies for a side for most anything I make for dinner.

Cook Time: 3 Hours
Total Time: 4 Hours and 30 Minutes
Servings: 6

Ingredients:

  • 2 lbs. beef, sliced (I used beef skirt)
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 onion, sliced
  • 1 clove of glarlic, minced
  • 15 ounce can of dices tomatoes
  • 2 tablespoons fajitia seasoning
  • 1 tablespoon olive oil
  • 1/4 cup beef broth or water
  • Make your own fijita seasoning:
  • 1 tablespoon corn starch
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon white sugar or sugar subsitute
  • 1/4 teaspoon cayene pepper
  • 1 teaspoon ground cumin
  • Mix all Fajita Seasoning ingredients together in a small bowl. Store in a glass jar.

Instructions:

  1. Slice the beef into thin pieces. Heat a skillet, add oil and beef, cook 4- 6 minutes or until brown. Remove beef placing it into the slow cooker. Add peppers, onion and garlic to the pan and cook vegetables about 5 minutes or until vegetable start to soften. Place vegetables into slow cooker. Pour broth or water into the pan and de-glaze the bottom, scraping up the bits with a wooden spoon or spatula. Add broth to the slow cooker, tomatoes and fajita seasoning. Mix all ingredients. Place lid on the slow cooker and cook on low for 3-4 hours.
