Ingredients:

  • Filling:
  • 2 tablespoons butter, room temperature
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • Muffins:
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 1/2 teaspoon pure vanilla extract
  • Icing:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream

Instructions:

  1. Preheat oven to 350

  2. Measure brown sugar, egg, and vanilla into a mixing bowl.

  3. Add buttermilk.

  4. Beat until combined.

  5. Sift in flour, salt and baking soda.

  6. Mix together with a fork, stir until thoroughly combined, do not over mix.

  7. Turn dough out onto a lightly floured surface and knead for one minute.

  8. Roll the dough into a 12 x 24 rectangle.

  9. Use a rubber spatula to spread the room temperature butter evenly over the surface.

  10. Sprinkle with brown sugar and cinnamon.

  11. Roll the dough into a log and stretch slightly.

  12. Cut into 2 inch pieces and put into greased muffin tin or muffin tin lined with papers.

  13. Bake 15-18 minutes until golden brown.

  14. Allow to cool 5 minutes and remove from tin.

  15. Drizzle with icing.
