Ingredients:
- Filling:
- 2 tablespoons butter, room temperature
- 2/3 cup brown sugar
- 1 teaspoon ground cinnamon
- Muffins:
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1 egg
- 1 cup buttermilk
- 1/2 teaspoon pure vanilla extract
- Icing:
- 1 cup powdered sugar
- 2-3 tablespoons milk or cream
Instructions:

Preheat oven to 350

Measure brown sugar, egg, and vanilla into a mixing bowl.

Add buttermilk.

Beat until combined.

Sift in flour, salt and baking soda.

Mix together with a fork, stir until thoroughly combined, do not over mix.

Turn dough out onto a lightly floured surface and knead for one minute.

Roll the dough into a 12 x 24 rectangle.

Use a rubber spatula to spread the room temperature butter evenly over the surface.

Sprinkle with brown sugar and cinnamon.

Roll the dough into a log and stretch slightly.

Cut into 2 inch pieces and put into greased muffin tin or muffin tin lined with papers.

Bake 15-18 minutes until golden brown.

Allow to cool 5 minutes and remove from tin.

Drizzle with icing.
