Semi-Sweet and White Chocolate Chip Cookies with toasted Pecans

cookie with chocolate chips and white chipsThis is a nice variation to a standard chocolate chip cookie. The oats, pecans and hint of cinnamon add more depth to the flavors and more body to the texture. Enjoy!

1 cup butter
1 1/4 cup brown sugar
1/2 cup white sugar
1 egg
1 pure teaspoon vanilla
2 cups all-purpose flour
1 cup oats
1 teaspoon soda
1 teaspoon salt
1/4 teaspoon cinnamon
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1 cup roughly chopped, toasted pecans

Preheat oven to 350. In a medium mixing bowl beat room temperature butter, brown sugar, vanilla and eggs. Add sifted flour, salt, soda, and cinnamon and mix together. Fold in oats. Stir and incorporate chocolate, white chips and toasted pecans. Chill dough 30 minutes. Scoop spoonfuls onto cookie sheet. Add a few extra chips on top the cookie mounds for better appearance. Makes 36 cookies. Bake 10 -12 or until golden brown.
